Once upon a time, I loved to cook. Then, I developed a relationship with over-working and became a take-out (and sometimes peanut butter out of a jar!) girl. And while I always love a good burrito, this year I’m making an effort to treat myself a bit more with my own love-imbued food.
I’ve been starting with treats!
Here is a new favorite recipe of mine. It’s FULL of superfoods and just tastes rad. If you are not familiar with chia seeds they are great thing to try! Formally of Chia Pet fame, chia seeds are an edible seed that comes from the desert plant Salvia hispanica, a mint plant native to Mexico. Chia seeds contain calcium, manganese, and phosphorus, and are a great source of healthy omega-3 fats, fiber, and protein. (Basically, they are perfect!)
Jamie’s Superfood Chia Pudding
- 2 ½ Cups Hemp Milk
- ½ Cup Chia Seeds
- 2 T Raw Honey
- Pinch Himalayan Salt
- 1 tsp Vanilla
- 1 tsp Cinnamon
Put all ingredients in a jar and shake to combine. Let mixture sit for 4 hours (or overnight) to thicken.
In my pudding recipe, in addition to chia, I’ve added MORE great nourishing foods to help you feel like the rockstar you are! Cinnamon is there to help regulate blood sugar and raw honey provides a natural sweetness full of antioxidants, anti-virals, and minerals. Hemp milk provides the pudding base and contributes vital amino acids to your daily diet. Vanilla and Himalayan Salt complete the mineral profile. In effect, you get a yummy treat that treats your body well.
P.S. I highly recommend you serve the pudding cold with fruit, nuts, chocolate, or your favorite toppings!
